Peanut Butter Cup S'Mores

 As the waning days of summer are upon us, the kiddies are heading back to school and this weekend is Labor Day I have been trying to preserve a little slice of my summer vacation by making more s'mores. As I mentioned in other posts, s'more remind me of family, friends and happy times.





The S'mores Cookbook provides the recipes to allow you to have a piece of summer all year long! Between the oatmeal which would be wonderful on a chilly Fall morning to the hot chocolate on a long winters night I think Susan has provided over 50 recipes that will help you to feel the summer glow all year.




This recipe could not be easier, you simply replace your favorite chocolate bar with a peanut butter cup and you have a delicious, peanut butter, chocolaty, marshmallow sandwich. Simply scrumptious!

Peanut Butter S'mores
Recipe adapted from: The S'mores Cookbook
Ingredients:

4 marshmallows
8 squares of graham crackers

Directions:

Preheat oven to 350. Place crackers on baking sheet and then place the peanut butter cup on top. Place in oven for a few minutes until the peanut butter cup starts to melt. Top with the marshmallows and bake a few minutes more. Watch so that the marshmallow does not burn. Then top with the other cracker. Let cool a little so that you do not burn your self and then enjoy!

Rolo Marshmallow Peanut Butter Brownies



I love cereal treats, brownies, caramels, marshmallows and peanut butter. The combination of all of them together may sound strange but it is delicious! It may be one of my favorite brownies ever. Not only are they scrumptious but they are EASY. 

As I still have a basket of Easter candy sitting in my pantry I decided to use what I had and since I was lazy I started with a mix. My favorite brownie mix to use is Ghiradelli but you can use which ever you like



Rolo Marshmallow Chocolate Krispie Brownies

Ingredients:
1 Box of Brownie Mix and ingredients on package
1/2 Bag of Rolo's opened and cut into pieces
1/2 7 oz jar of marshmallow fluff or Marshmallow Easter eggs cut in pieces
2 cups of chocolate chips
1 cup of smooth peanut butter
2 cups of Krispie Rice Cereal

Directions:

Prepare a box of brownies according to the directions on the package. Bake in a 8x8 inch pan lined with foil.  After they are cooked according to the package directions let cool for a few minutes. Pour the marshmallow fluff in a layer over the brownies, and then put a layer of the Rolo's over the top. Return the pan to the oven for a few minutes until the Rolo's melt. Remove from the heat and set aside.
Add the peanut butter and the chocolate chips to a small sauce pan and over low heat melt and combine. Once mixture is melted add the Krispie Rice Cereal and mix well. Pour the mixture over the brownies and spread to cover.

Place pan in refrigerator to cool completely before cutting.


Note: I like the chocolate layer to have more Krispie Rice cereal in it, so I added about another 1/2 cup. I also cooled mine in the freezer for about 20 minutes and then lifted the bars out of the pan by the foil and cut into pieces. Then returned the pan to the refrigerator. I also used chocolate covered marshmallow eggs for the marshmallow layer as I had a bag of them left but marshmallow fluff serves the same purpose. 





These brownies are rich so I recommend cutting them into small squares to serve. I think that you will enjoy the rich chocolate flavor combined with the salty caramel, sweet marshmallows and the krispie peanut crunch.

Reeses Peanut Butter Cup Rice Krispie Treats



If you have followed this blog for a bit than you know I LOVE peanut butter and anytime I can use it or peanut butter cups in a recipe I do. The inspiration for this recipe came from a photo that I saw on Pinterest, the recipe is from Food Snots it's delicious!



 
I am a huge fan of homey, easy desserts, especially if they are cereal treats with marshmallows or corn syrup, so these treats were right up my alley.




Reeses Peanut Butter Cup Rice Krispie Treats
Adapted from Food Snots

6 cups Rice Krispies Cereal
1 bag of Reeses mini peanut butter cups or Reeses Rabbitts from Easter
5 Tbs butter or margarin
3 Tbs light karo syrup
1 (10 ounce) package plus 2 heaping cups of mulit colored miniature marshmallows
1/3 cup peanut butter
1/2 cup chocolate chips

In a large bowl, combine cereal and diced Reeses. Set aside. Spray a 8 x 8 in. pan with cooking spray and set aside.

In a large pot melt butter over low heat. Add karo syrup and marshmallows and stir continuously until mixture is smooth. Remove from heat and add cereal mixture into the pot and fold together just until cereal is evenly coated.  Press mixture into the 8 x 8 in. pan. Set aside.

In a small microwave safe bowl, add peanut butter. Microwave for 30 second to a minute to melt. Set aside to let cool slightly. In a separate small microwave safe bowl, melt chocolate at 30 second intervals, stir between intervals, until smooth. Set aside to let cool slightly. You can either drizzle the peanut butter and the chocolate over the treats or pour over the top and swirl around.

Reese's Peanut Butter Egg Banana Bread



Easter is long gone but for those of us who still have leftover candy there are not too many recipes that call for Reese's Peanut Butter Eggs, and as you can see I have a few. I love these things but I think it is safe to say that I have eaten my share for the season. As I also had some bananas I thought this might be an interesting recipe, after all who doesn't like peanut butter and bananas, throw in some chocolate and you have perfection!



This is a great recipe and it makes two loafs so if you are not too sure of the chocolate and peanut butter than you could try one of each.



Banana Bread Recipe

Ingredients:

1 cup softened butter
2 cups Sugar
4 eggs
1/4 tsp salt
2 tsp baking soda
4 cups of flour
6 ripe bananas
15 small or 7 large Reese's Peanut Butter Eggs chopped

Directions:

Prepare two pans with cooking spray and set aside. Preheat over to 325. Cream together butter and sugar, add eggs and blend together. Then add the smashed bananas.  In a separate bowl mix flour, salt and baking soda. Add dry ingredients to the wet. Mix only until the flour is incorporated. Then  add the chopped peanut butter eggs. Pour into prepared pans.  Bake for 1 1/4 hours or until a knife comes out clean. Set on wire rack for 5 minutes, then turn bread out of pan and let cool. If you can wait that long.




I was not too sure that I would like the peanut butter eggs, so I made one loaf of each. The above photo has a lot of chopped up Reese's Eggs, you do not need to put that many in your batch. It is your preference.




I made a plain loaf also, and if you want you can add nuts to it.


I hope you try this recipe, it is great! Frankly I have tried many banana bread recipes and this one is my favorite.
