Triple Chocolate Cheesecake





I love chocolate and I LOVE cheesecake! As I was browsing through an old pile of tear sheets I came across a recipe from the original and incomparable Martha Stewart. I do so enjoy a great recipe from Martha, and let me tell you this one is FABULOUS! I have made many, many cheesecakes but this has to be my favorite.






Triple Chocolate Cheesecake
Recipe  adapted from Martha Stewart

Ingredients

  • 1 package (9 ounces) chocolate Oreo cookies
  • 6 tablespoons unsalted butter, melted
  • 4 bars (8 ounces each) cream cheese, room temperature
  • 1 1/2 cups sugar
  • dash of nutmeg
  • dash of cinnamon
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup sour cream
  • 8 ounces semisweet chocolate, melted
  • 2 ounces of milk chocolate melted




Directions

  1. Preheat oven to 325 degrees. Assemble a 9-inch spring form pan with the raised side of the bottom facing down.
  2. In a blender, pulse cookies until finely ground. Add butter, and pulse to moisten. Transfer to prepared pan, and press crumbs firmly and evenly into the bottom. Place pan on a rimmed baking sheet; bake 10 minutes, and set aside.
  3.  In a large bowl, add cream cheese, sugar, and salt; blend until smooth with electric mixer. Add eggs, then sour cream, and finally chocolate; blend filling until smooth, scraping down sides of bowl as needed. This is where I separated part of the filling and added the melted milk chocolate to 1/2 of the filling.
  4. Pour filling onto crust, and bake just until set, 1 hour. Turn oven off, and let cheesecake sit 1 hour in oven, without opening (this helps prevent cracking).
  5. Run a thin knife around the edge of the pan (this helps prevent cracking, too); leave in pan, and cool completely on wire rack. Cover loosely and refrigerate, at least 6 hours or up to overnight.
  6.  Unmold cheesecake. Spread ganache in center of cheesecake (IF USING)  let set before serving.

NOTES: I made a 1/2 recipe. And used a 5 inch cheesecake pan. I also decided instead of making Ganache for the top after it was finished, I took part of the filling about  1/4 and added a melted milk chocolate to it. So my directions are as above, if you want to have a layer of ganache on top than follow the link to Martha Stewart's website.

Reese's Peanut Butter Egg Banana Bread



Easter is long gone but for those of us who still have leftover candy there are not too many recipes that call for Reese's Peanut Butter Eggs, and as you can see I have a few. I love these things but I think it is safe to say that I have eaten my share for the season. As I also had some bananas I thought this might be an interesting recipe, after all who doesn't like peanut butter and bananas, throw in some chocolate and you have perfection!



This is a great recipe and it makes two loafs so if you are not too sure of the chocolate and peanut butter than you could try one of each.



Banana Bread Recipe

Ingredients:

1 cup softened butter
2 cups Sugar
4 eggs
1/4 tsp salt
2 tsp baking soda
4 cups of flour
6 ripe bananas
15 small or 7 large Reese's Peanut Butter Eggs chopped

Directions:

Prepare two pans with cooking spray and set aside. Preheat over to 325. Cream together butter and sugar, add eggs and blend together. Then add the smashed bananas.  In a separate bowl mix flour, salt and baking soda. Add dry ingredients to the wet. Mix only until the flour is incorporated. Then  add the chopped peanut butter eggs. Pour into prepared pans.  Bake for 1 1/4 hours or until a knife comes out clean. Set on wire rack for 5 minutes, then turn bread out of pan and let cool. If you can wait that long.




I was not too sure that I would like the peanut butter eggs, so I made one loaf of each. The above photo has a lot of chopped up Reese's Eggs, you do not need to put that many in your batch. It is your preference.




I made a plain loaf also, and if you want you can add nuts to it.


I hope you try this recipe, it is great! Frankly I have tried many banana bread recipes and this one is my favorite.

Slutty Brownies



What do you get when you take,



 a roll of chocolate chip cookie dough,


 a box of brownies



and some Oreo's?

Yes, I do mean, all three items in the same recipe!



 Only the biggest recipe in blog land for the past few months.



  I am not sure where the recipe originated or if Rose from  The Londoner, made it up but she calls them the Slutty Brownies.



In fact, I read in the newspaper that Jessica Simpson spoke of these very brownies on a late night TV show and then was lambasted for using such vulgar terminology and degrading women.  Whatever you want to call them, everyone that I gave them to loved them!

The recipe is very simple:

Take a 9x9 baking pan, line with foil and spray with cooking spray. Press roll of cookie dough into the bottom of the pan. Then take the Oreo cookies and press them into the cookie dough, use enough to line the cookie dough. Finally, mix up brownie mix using the directions on the box. Pour the mixture over the Oreo's and cookie dough. Then bake the entire mixture for 45-50 minutes and a toothpick comes out clean.

Cadbury Creme Eggs 100 and 1 ways

Cadbury Eggs were first created in 1923 by the Cadbury Brothers, but weren't enjoyed in their current form until 1963. Unlike many other kinds of candy that are available, Cadbury Eggs are only around at this time of year so if you are a fan you better buy a bunch to have after the holidays.

Tripple Chocolate Kettle Corn



While visiting Milwaukee recently, my mom gave me a bag of kettle corn that had dark and white chocolate drizzled on it. Normally I do not like kettle corn but I loved this stuff. I cannot tell you the name of the company because I ate the whole bag and threw it away. But I did manage to duplicate it.

Friday, after going to an appointment I ran into Trader Joe's, you know the saying, "never go to the store hungry"? It was almost embarrassing the things I was hastily throwing into the cart, my plan was to tell the check out person I was having a party if any comment was made. One of the items that found its way into the cart was the Trader Joe's Kettle Corn, and its companion package of "Movie popcorn and from that outing this delicious and tasty treat was born.



Now, you can make your own kettle corn(recipe here), or you can just use a pre-made bag as did; this may be the easiest thing you have ever made. I prefer the Trader Joe's Kettle Corn because it is just lightly sweetened and you can still taste a hint of the salt.

Ingredients:

1 Bag of kettle corn
1 cup of white chocolate melted
1 cup of semi-sweet chocolate melted
1 cup of milk chocolate melted


Directions:

Place kettle corn on large rimmed baking sheet or large Silphat baking liner. Drizzle chocolate over popcorn. alternate between the three chocolates until all of the chocolate is used up or corn is coated to your desired tastes.



Can it get any easier? You can stir your chocolate to coat the kettle corn a bit more, that is what I did. It is not as pretty as if you just leave the drizzles of chocolate but I was a little impatient.



This is a great snack or even a nice little gift in a cute tin or Cello bag. I hope you try it!

Chocolate Butter Cream Frosted Cupcake Recipe



Happy Friday!

 I do not know about you but the weekend is when I love to  try out new recipes, mostly baked goods but also savory eats too. I thought I would share an easy and delicious recipe for chocolate cupcakes with chocolate butter cream frosting that I made last weekend. These cupcakes are delicious! My favorite part was liking the spatula for the frosting, it is some of the best I have ever made. 



The recipe for Chocolate Butter Cream frosting came from a great blog I found while perusing Pinterest, called Savory Sweet Life. The recipe for the cupcakes is the one I always use, you can find it on the back of the Hershey's cocoa can or go here where I wrote about it.


Sweet Savory Life

Butter Cream Frosting Recipe:

INGREDIENTS:
2 sticks of softened butter (Must be SOFT not melted)
31/2 cups of powdered sugar
1/2 cup of cocoa powder
1/2 tsp salt
2 tsp of vanilla
4 tablespoons of heavy whipping cream

DIRECTIONS:

Cream softened butter in an electric mixer for a few minutes. Turn off mixer and add the cocoa powder and the powdered sugar, start mixing on low speed otherwise you will have a huge mess. Mix ingredients until incorporated and then add the salt, vanilla and the heavy whipping cream. Mix on high for 4 minutes or until light and fluffy.
