Reese's Peanut Butter Egg Crispy Crunchy Brownies


I love Reese's peanut butter eggs, and have been known to eat copious amounts during the Easter season. Not only do I enjoy eating them right from the package I think they make a great accompaniment to my favorite treats.

Reese's Peanut Butter Egg Crispy Crunchy Brownies

This week I made a batch of Reese's peanut butter eggs crunchy crispy brownies that you will definitely want to make and share, or just keep all to yourself. The recipe is very easy, you simply make a batch of brownies(boxed is fine too), add a layer of chopped peanut butter eggs, then add the crispy topping. 


Reese's PEanut Butter Cup


Ingredients 

1 pan of brownies, I used this Recipe

8-10 Reece's Peanut Butter Eggs or cups, chopped

Topping

12 oz. bag of  chocolate chips
1 cup creamy peanut butter
3 cups crispy rice cereal


Directions

Bake the brownies according to the directions of whatever recipe you are using. Remove from oven. Sprinkle the chopped eggs over the top of the brownies. 

In a saucepan over low heat melt the chocolate chips and the peanut butter once melted remove from heat and stir in the cereal. Pour over the brownies and spread an even layer on the brownies. Let the brownies sit and the topping harden then cut and enjoy.

Bailey's Irish Cream Chocolate Rice Pudding


I don't know about you but I always have leftover rice, either from Carry-out or when I make it at home. Instead of reheating it I like to reuse it to make one of my all time favorite desserts, rice pudding. This week I thought I would adapt a recipe I have used in the past to include chocolate(of course) and a little Baileys Irish Cream.

Baileys Irish Cream Chocolate Rice Pudding
Recipe adapted from All Recipes

11/2 cups of cooked rice
11/2  cups of milk 
1/8 teaspoon salt
1/2 cup of Baileys Irish Cream
3/4 cup chopped chocolate or 60% chocolate chips
1 egg beaten
1/4 cup sugar
1 tablespoon butter
1 teaspoon vanilla


Combined cooked rice with 11/2 cups of milk and salt, and cook over medium heat until thick and creamy. About 15 minutes. Then stir in chocolate chips, Baileys, egg, stir continuously until chips are melted and egg is set about 3-4 minutes. Remove from heat and stir in butter, vanilla. Pour into glasses and either serve warm or put into the refrigerator to cool.




This pudding is creamy and delicious and it is the perfect dessert on Winters eve. I hope that if you try it you come back and let me know how you liked it!

Dark Chocolate Atole





As the weather get warmer a cup of hot chocolate in the morning or before bed is one of my favorite beverages. This chocolate atole is a wonderful addition to your drinking chocolate repertoire because it "kicks it up a notch" with a little spice and a little rum. The consistency is a bit like pudding because of the cornmeal. I think you will love it on a cool Fall or winter evening. 



Dark Chocolate Atole 

Recipe from Katherine Clapner of Dude, Sweet Chocolate

1/2 cup of fine ground cornmeal
21/2 cups of whole milk
21/2 cups of water
1 teaspoon Saigon cinnamon
5 tablespoons cane sugar
1 tablespoon vanilla extract
1 tablespoon of dark rum
1 teaspoon salt
6 tablespoons Valrhona cocoa powder
6 ounces Valrhona Equatorial chocolate
Whipped Cream

Combine the corn meal, milk water, Cinnamon, sugar, vanilla and rum in a blender and blend the mixture until smooth.
Transfer the mixture to a medium saucepan and add the salt and cocoa powder. Bring to a boil over medium heat whisking constantly. Reduce heat to low and cook until the mixture thickens slightly, then cook for an additional 5 minutes. Add chocolate and whisk until melted.

Serve with whipped cream and enjoy.
