At the end of the week I always have a few bananas laying around. I have a few weird food rules and I do not like bananas that have any spots on the outside and I really only enjoy them if they are "just ripe: so this actually happens pretty frequently.
Normally I make banana cake or plain banana bread. This weekend I thought I would try a Chocolate Chocolate Chip Banana Bread. IT is delicious! The bread is moist, and the addition of the chocolate and the chocolate chips makes it a little decadent and seem more like a dessert as opposed to a quick bread.
Chococolate Chocolate Chip Banana Bread
adapted from Joy of Baking
1 3/4 cup of flour
1/4 cup of cocoa powder
1 cup of sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 large eggs slightly beaten
1 stick of butter melted, and cooled
3 ripe bananas mashed well
1 tsp vanilla extract
1/2 cup of dark chocolate chips
Mix together flour, cocoa powder, sugar, baking powder, baking soda, cinnamon and nutmeg.
Stir the mashed bananas, eggs, melted butter and vanilla. Carefully fold the banana mixture into the dry ingredients until just combined. Mix in the chocolate chips.
Pour into greased loaf pan or 3 mini pans. Bake at 350 for 55 minutes until bread has risen and a toothpick inserted into center comes out clean.
Cool 5 minutes in pan than turn out onto wire rack.
